Ingredients:
- 1 medium/large sweet potato (serves 2)
- olive oil
- salt
- Preheat oven to 425 degrees
- Peel and cut the sweet potato in half and then length-wise into about 1/2 inch thick strips.
- Spread the fries out onto a baking sheet.
- Drizzle with a generous portion of olive oil.
- Salt to taste
- Place in the oven and bake for 15-20 min. then flip the fries, drizzle with more olive oil and place back in the oven for another 10-15 min.
- You will know they're done when they start to brown and are soft.
- You don't need cinnamon or sugar because the sweet potatoes have enough sweetness by themselves.
I also enjoy cutting the sweet potato into discs and cooking the same way. Sometimes I vary the seasoning to go with what I am cooking (Jane's Crazy Salt is my most often-used).
