French Bread Pizza

Thanks to a blog post by one of the ladies in our Bible study group (thanks Rachel Meitl, who borrowed it from Rachael Ray), I made the most delicious French bread pizza on Sunday night. I finished the leftovers for lunch today and it was just as good the second time around. It's super easy and oh so yummy!! (as you can tell, I really liked it)

Ingredients:
  • French Bread
  • 1/2 lb sweet Italian sausage (I think the original recipe calls for ground sausage; however, I misunderstood and bought chicken sausage links that Walter and I love from Trader Joe's and they really made the pizza extra delicious!)
  • 1 cup ricotta
  • 1/3 cup milk
  • salt and pepper to taste
  • dried oregano, thyme, whatever you like on your pizza
  • 3 garlic cloves, minced
  • 1/2 tsp crushed red pepper flakes (use less if you don't like your food too spicy)
  • about 1/2 bag of baby spinach
  • shredded mozzarella cheese
  • diced tomatoes
Directions:
  1. Toast both sides of the French bread under the broiler for 3 minutes on each side. (I added a little olive oil to the bread prior to broiling)
  2. Cut the sausage links in half length-wise and brown on medium high, then set aside on a plate/paper towel to drain.
  3. In a separate bowl; mix together ricotta, milk, salt, pepper, and dried herbs. Just eyeball the seasoning.
  4. Drain most of the grease from the pan, lower the eat on the burner, and add the garlic and red pepper flakes. Allow the flowers to infuse the oil then toss the spinach in it.
  5. Spread the ricotta mix on the French bread, top with sausage, spinach, shredded mozzarella and tomatoes. Put it back under the broiler until the cheese is brown and bubbly.
